By sourcing their whiskey, Ascendant Spirits is able to put all of their time, focus, and effort into the aging process for their tiny production of Breaker whiskeys. The mash bill here includes wheat, corn, and barley, and is aged in barrel for five years. Only eight barrels are selected for each batch, and the selection process is a careful and deliberate one. Here, eight new, 53-gallon White American Oak barrels are deeply charred and translate to a beautiful texture on the palate. Their craft is apparent on the nose, as well, with aromas of pulpy tropical fruit, soft grain, warm spice and an edge of vanilla. The texture is rich and smooth with a pleasant viscosity. The palate opens with spiced plum and vanilla-poached pear, delivering into a spiced finish with lingering citrus rind. In all, a beautifully balanced and comforting wheated whiskey.
