This rum, produced in southern Haiti near the village of Cavaillon, is made 100% from a sugarcane called Madame Meuze. Naturally cultivated, cane is pressed into a juice, fermented naturally with wild yeast, and distilled in a homemade pot still. Made in one continuous copper still with a homemade gas can condenser attached . Made in the traditional local style of distillation that honors the Arawaks, first people of Haiti.
