Though launched in only 2013, Four Pillars has quickly demonstrated the promise of Australian gins, specializing in the use of local botanicals. The Bloody Shiraz Gin is their ever-local answer to Sloe Gin. Sloe berries don't grow in their local Yarra Valley - but Shiraz grapes certainly do. The grapes are macerated in the distilled gin, without the addition of any coloring or sweetening agents. The final gin is unfiltered to maintain its full complexity. Despite the complete omittance of any sugar beyond the grapes themselves, the final product is mildly sweet, bursting with pomegranate, plum, bramble berries, orange, coriander, and white pepper. Absolutely delicious on its own, but get inventive with it in a Collins, Jasmine, or Spritz (think French 75!)
