Glendalough makes a very convincing argument on the sippability of Irish whiskeys, here aging their pot still whiskey first in Bourbon barrels, then finishing it in Oloroso Sherry barrels. The result is compellingly delicious. Aromas of marzipan, vanilla, maple fudge, and toasted pecan are supported by notes of baked apple and oak. The palate is rich with salted caramel, chantilly cream, and custard with notes of candied orange and berry behind. A smidge of pepper and holiday spices linger with oak notes in the finish. Delicious to sip, but can also be made into a very tasty Old Fashioned.
