The name of Kojiki reflects its aim: "Records of Ancient Matters." By pulling from various spirit and wine traditions around the world, they are able to create an impressively refined product at a surprisingly affordable price point for the experience it delivers. The mash bill here is comprised of 40% barley (a small portion of which is peated), 30% wheat, and 30% corn. The whiskeys for this blend come from Kojiki's distillery in Kansai, near Kyoto, on the shore of Lake Biwa, the largest body of fresh water in Japan. The blended whiskey is distilled twice in traditional pot stills. The aging process takes place for three years in Bourbon barrels, three months in Sauternes barrels, and four months in Champagne casks, with a yearly produciton of 400 barrels per year. The result is surprisingly harmonious and delicate. Aromas of fresh white almond, butterscotch, baked golden apple, and the suggestion of mango caramel on the nose. The palate is smooth and silky, with flavors of dried apple and pear complemented by deftly handled oak and underlying peat earthiness. This is one to drink on its own, in order to fully enjoy the complexity in the glass.
