Koval makes it clear that history and innovation can go hand in hand. They may be housed in Chicago's first distillery - a structure dating to the mid-1800s - yet this Bourbon is anything but typical. Made from a mash bill of 51% corn and 49% millet, it's a delightfully unique and approachable deviation from the norm. As with all Koval's products, there is minimal distance from farm to bottle; they work closely with their organic farmers, perform every step of production in-house, and label each bottle with a denotation of its single-barrel origin. Notes of floral honey, anise, eucalyptus, and stone fruit on the nose lead to an oily-textured palate with prickly spice and a kiss of heat, followed by savory grain notes, smoked eucalyptus, clove, and a touch of vanilla.
