Small-batch distiller Myer Farm produces this gin on-premesis from a wheat base, then vapor-infusing ten botanicals for delicate expression. It then spends an aging period in their own ex-Bourbon barrels, turning this into a delightful balance of opposites. Aromas of myriad spices and cinnamon butter overlay a creamy, sweet-citrus background. The gin botanicals show more in the palate, particularly on the finish, where cooling juniper and fir weave in and out of orange rind, allspice, cinnamon, and oaky vanilla notes. Fantastically complex, it really shows best on its own or on the rocks, although a few dashes of bitters provide a nice counterpoint, and for Martinis, go for a dry vermouth.
