Suze falls into the same category of gentian-infused liqueurs as Salers and Bonal, but lies on the gentler end of the spectrum, lending it great versatility. It's made from the bitter roots of wild gentian, harvested from the foothills of the Alps, and produced in Switzerland. Its cooling, bittersweet herbaceousness is accented by dried orange peel, earthy spice, and small dried flowers. Use it as a softly bracing summer apéritif on the rocks with soda or tonic and an orange twist, drop a bit in your Martini pre-stir, or use it in a smaller proportion with Prosecco and soda for a super-crisp spritz.
